Sticky Chicken Wings

For the sticky sauce
  • vinegar 1/4 cups
  • sugar 1/4 cup
  • lemon juice 1 teaspoon
  • soy sauce 2 tablespoons
  • garlic, chopped 1/4 clove
  • fresh ginger, crushed 1/2 teaspoon
  • mayonnaise 1/4 cup
  • fresh cilantro, chopped 1 tablespoon
  • salt and pepper to taste
  • sesame seeds, garnish 2 tablespoons
  • spring onion, garnish 1 tablespoon
  • For the chicken
  • wings, washed and dried 8
  • sunflower oil 2 tablespoons
  • salt
  • Directions

    1. Rub chicken wings with oil and season lightly with salt.
    2. Grill the chicken on a frying pan on both sides, on a low to medium flame, until well browned and cooked through, then set aside.
    3. Bring together all the sticky sauce ingredients except coriander and mayonnaise, to the boil in a frying pan on high heat for five minutes stirring often. 
    4. Allow to cool and add to a blender/food process or alternatively beat by hand, with the mayonnaise and cilantro
    5. Pour the sticky sauce over the chicken in the frying pan stirring constantly.
    6. When the chicken is well coated remove from heat, cover with sesame seeds and spring onion and enjoy!
